Tomorrow I will make Asian meatballs with basmati rice. Here is my recipe if you would like to follow, or tweak to your liking of course! As far as the basmati rice, I am just using a 90 second one I will pop in the microwave to save some time. And I also will be adding green beans sauted in garlic and butter. But look in you pantry or freezer, make side dishes from what you have left in the pantry.
Asian meatball ingredients:
- 1lb ground chicken
- 1 or 2 cloves minced garlic
- 1 teaspoon minced fresh garlic
- 1/2 tablespoon soy sauce
- 1 teaspoon sesame oil
- finely chopped sacallions use between 1-3 to your liking
- 1 large egg
- Panko bread crumb- about 1/2 cup
Mix, do not over mix and roll into balls to your size preference. Then place in oven on a baking sheet lined with foil at 400 degrees or about 15 min. I you prefer you can fry on stove top, brown on each side then place in oven for about 15 minutes.
For the sauce:
- 1 teaspoon fresh ginger
- 1 clove garlic minced
- 1/4 cup soy sauce
- 1 teaspoon corn starch
- 1 teaspoon siracha
- 1 teaspoon sesame oil
Prepare the sauce and place in skillet and put on low heat. Whisk it until it boils and wait approx 1 min for it to thicken. Now you can place your meatballs in the skillet and give a good mix. Let it simmer on low and serve any time your sides are ready. Enjoy!
