Tomorrow I will once again do Taco Tuesday, but this time with a twist. I have a box of large shells (pasta) in my pantry that I would like to use up. So I will cook those as normal on the stove top. In another pan I will cook my ground beef and then add my taco seasoning, crushed tomato and a cup of shredded cheese of your choice. Let that simmer on very low for just a few minutes. I will then strain those shells and then place in a glass baking dish. I will spoon my mixture of taco meat into each shell. I will then top with dice plum tomatoes and sprinkle about another cup of your shredded cheese over that. I cover with foil and let back on 350 degrees for about 20 minutes. I typically just serve as is with some sour cream and guacamole to dip. Enjoy!
